Ingredients
- 500g pork belly (or pork jowl), boiled and diced
- 1/2 cup pork liver (optional), boiled and finely chopped
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2-3 green chili peppers, sliced
- 1/4 cup vinegar
- 2 tablespoons soy sauce
- 1-2 tablespoons calamansi juice (or lemon juice)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons cooking oil
- 1/4 cup mayonnaise (optional, for creaminess)
- 1 egg (optional, for topping)

Prepare the Pork:
Boil the pork (and liver, if using) until tender, then let cool and chop into small, bite-sized pieces. -
Sauté Aromatics:
Heat the cooking oil in a skillet over medium heat, then add garlic and onion; cook until soft and fragrant. -
Fry the Pork:
Add the diced pork to the skillet and fry until the edges begin to crisp; stir in the sliced green chili peppers. -
Season:
Pour in the vinegar and soy sauce, and add salt and pepper. Allow the mixture to simmer for about 5 minutes to blend the flavors. -
Finish and Serve:
Optionally, stir in mayonnaise for extra creaminess, and top with a raw or lightly cooked egg. Serve hot, preferably on a sizzling plate, and finish with a squeeze of calamansi juice.
